Chicken Burrito turns three.


Today is this little chicken burrito's 3rd birthday! We call her chicken burrito because she sometimes looks like a little chicken and sometimes like a burrito, haha! But her actual name is Charlotte, and no, I did not name her. 

When we moved to Manitoba, Mark and I wanted to add another addition to our trio - we only had our pup Rosie at the time. So, while we were on our journey to our new home, I searched up the local shelter and they had many (too many) cats to choose from. Scrolling down, I stumbled upon this beautiful ginger cat with a familiar name. We both fell in love and once we arrived in Brandon, we headed to the shelter.

There were so many wonderful cats and a few adorable kittens. We had our heart set on Charlotte but when we saw all of these amazing fuzzy purr-monsters, it made our decision (mine) a little more difficult. I wanted them all but obviously, that would be a little crazy. And Charlotte was even more perfect than we imagined! She was calm with some spunk, didn't bite or scratch and she was so cuddly. She was perfect.

The next day, we got a call from the shelter saying that we could pick her up at any time.
We got her, brought her home, and it was like she had been with us since day one. She blended so well into our little family and Rosie had a new best friend :)

We could not have been blessed with a better cat than Charlotte!
(Sorry for the dragged out story. I just love my cat too much not to share!)

Love Day.

Valentine's Day is such a lovely day, isn't?

I know that you should show your love for the special one's in your life every day but Valentine's is a nice day to really go above and beyond.
To spoil the one's you love - including yourself!

This Valentine's Day, I decided to kick it up a notch and go for the gold... by making breakfast AND supper! 
Woah! I can't believe it either. 

So, our day started off with eggs in a whole - heart-shaped to fit the occasion - and ended with a "hearty" pot of turkey chilli. And to keep with our tradition, we had a heart-shaped Hawaiian pizza at Boston Pizza, which was divine!

I hope that you all had a wonderful Valentine's Day!

I didn't have a heart-shaped cookie cutter so I just went for it!

Zucchini love ft. chicken and corn.




So, I normally share food posts on Sunday's but I made this last night and I wanted to share it with you all!
Once I saw that this recipe had zucchini in it and it was easy to make, I knew I had to give it a try.
It was so simple to make and took about 20 minutes. I went by the recipe word for word (probably the first time that has ever happened) and it turned out perfect!
The zucchini is such a delicious veggie and I cannot believe that I have gone about 2 years without eating any. 
It has now been permanently added to my grocery list!

Into the woods.

If you are from the Atlantic provinces, you know that they have a plethora of trees.
Well, here in South-West Manitoba (and most of Manitoba) it is a little more work to find a group of trees. Driving along the highway is such a bore because it is all farmland (nothing against farms or their land). 
The other day, I happened to remember passing by a place called Sprucewood Provincial Forest/ Camp Hughes just 10 minutes away (okay, so they aren't that hard to find)!
So, I told Mark that we should go on a little outdoor adventure and use his camp stove to make some tea! 
And we did!

Mornings.

Mornings are such a magical time. They are your "clean slate".
If you have read my list gratitude, then you will know that mornings are mean something extra special to me. They are a time to prepare yourself for the day ahead. I love to start my mornings as early as my body will allow – normally before the sun rises. I love sleep but I just get too excited to get out of bed and start my day!

This year, I have finally nailed my morning routine. It starts with a hot cup of peppermint tea, my Bible and my journal. There is nothing better than waking up before the sun, reading God’s word, and taking time to express gratitude and to reflect. It's such a wonderful time and starts my day off with so much joy!


If you are not a morning person, try to find something worth getting up 20 minutes, 10 minutes, even 5 minutes earlier for. 
Make time in the morning for something that brings you joy :)



*I accidentally deleted this post and to recover has been a hassle (I have no patience), so I decided to just start from scratch. 
Technology and I are not the best of friends.

Terrible Twos.

Noah is two today!

As someone who does not have human children, my dogs and my cat are my children. 
I just cannot believe how far he has come as a dog. Now, that may sound weird but it's true!
When we first adopted Noah, he was such an ill pup who had a skin condition. He had little energy, was super weak and you could tell he was uncomfortable. But he was and is such a happy dog! 

After a couple of months of being on medication, he finally received a clean bill of health from the vet and quickly started to gain strength and speed. I used to be able to out-run this guy... now, I am left in the dust, haha!

He is such an awesome dog and I wish that more people would see it when we are out (his barking probably doesn't help but I mean..).
I love him so so much and if you do not own a dog, you need to head to your nearest shelter and bring home! If you can't, get a cat! And if you can't get a cat, get a hamster, bunny, fish, bird, iguana, etc. Everyone needs a pet in their lives!


This was Noah the first day we brought him home. So sweet but so sick.
